This is comfort food - and not that thing on a muffin with Hollandaise sauce that reminds me of going out for a mediocre brunch with dark glasses and a hangover, and not bothering to find somewhere nice to eat. Rather, it is the version that makes me think of Mum cooking and Sunday evenings eating in front of the Muppet Show, way back when. I’ve slightly re-jigged her version, as I am making it with chard instead of spinach. Also, I’m not truly satisfied with breaking an egg into the middle
