My taste in pizzas leans towards those with tomato and without cheese, or vice versa. This particular pizza blew my mind not least because it was covered in tissue-thin flakes of pungent white truffle. With no truffle at all, it is still fantastic and born for cold weather. Contrary to suspicions, it is not dry or cloying to the mouth, as the dough is crispy and the potato moist when applied in a thin layer, while all relax in the melted warm arms of lady mozzarella.
