Bread sauce is to pheasant what Batman is to Robin: essential. Mashing it up on the plate with gravy and the remains of potato is a pleasurable habit I just can’t resist, even though it drives my mother nuts. This sauce is also fabulous with chicken, duck, turkey, goose, grouse, pigeon, hare and venison. I haven’t tried it with a quartet of robins yet.
Bread sauce is always better if made in advance and left to mature. I make it the morning before the meal.
