I love oatcakes - they are really easy to make and perfect nibbling food for walks. I like mine thin, made with fine oatmeal, not the coarse ones that clag up the inside of your mouth. Too many cheese biscuits are overly sweet or confused with chile flakes, sesame seeds and so on. Good cheese needs a fairly blank canvas.

Preheat the oven to 160°C fan/180°C/Gas 4. In a bowl, combine the oats with the melted lard or fat, salt and bicarbonate of soda. Dribble in water at intervals, stirring with a spoon. A ball will form naturally. It should be pliable like Play-Doh but not overly sticky, a
