This is a humble treatment of mussels, a recipe learnt from a shellfish farmer on Holy Island that is so simple it does not even contain an onion, although you may happily include it. It’s the kind of thing I cook in boxer shorts with my wet trousers on the radiator - a great tea after a long, rainy coastal walk. My preferred bread would be heavily toasted Irish soda bread.
