This is a perfect dinner for a Sunday night. Make sure that your chosen tomatoes are good ones.

Ingredients

  • 4 good fat ripe tomatoes
  • a little red wine vinegar
  • 3 teaspoons

Method

Preheat the grill to just under its highest setting. Slice the tomatoes in half and lay them on some baking paper on a baking tray. Splash over a little red wine vinegar. Scatter over the sugar, some salt, a really good grinding of black pepper and the thyme. Cut the butter into slices and divide between all the tomatoes.
