This is a favourite pudding of mine - a) because the gingersnaps taste like Dime bars and b) because you get to smash them. Of course, the berries and cream are great too. I have done quite a lot of snap mix here, as every time I have made them I have burnt some and been smoked out of the kitchen. If you are nimbler than me, this recipe will leave you with extra snap mix, which freezes well, or you can make extra for the biscuit tin.
