A woefully betrayed fruit, quinces are seldom seen any more either in the greengrocer or supermarket and this is a shame, for they are truly delicious in a different way to their cousins the apple and pear. The Spanish and Portuguese love them reconfigured as membrillo, a delicious sweet, dense quince jelly that is a good accompaniment to cheese.

Quinces do require cooking and maybe this is why the taste for them has disappeared in this ‘I simply don’t have the time to cook’ age. It
