Ingredients

  • 2 large cucumbers, peeled
  • good gin, such as Hendrick’s, Sipsmith, Plymouth or Bombay Sapphire

Method

Put the cucumbers into a food processor and blitz until totally turned to slush. Over a measuring jug, place a fine sieve, covered with a fresh J Cloth. Pour the cucumber mixture in and push all the liquid through until only the sediment is left. Pour the juice into an ice tray and place it in the freezer until frozen.
