This deeply wonderful cup of hot milk, drunk from battered enamel mugs, was our saviour in the Northern Indian jungle when the night-time temperature would suddenly plummet. The sweetness of the chai we drank was illustrated by our guide’s teeth, but it is a drink that should be sweet. When not warmed enough by this, a shot of whisky was our preferred chaser.
