Bring the stock to the boil in a large saucepan over a high heat. Finely slice and mince the lower portion of the lemongrass stalk and put the top in the stock whole. Add the ginger, lime leaves, fish sauce, mirin, soy sauce, vinegar, chilli, lime juice and bonito flakes and stir well. Turn the heat down to low and simmer for 5 minutes.
