The Belgians are primarily known for their mussels and French fries, but this is a less well-known, traditional Belgian recipe for chicken. It’s a rich, chunky soup that will keep you going throughout the day. You can also try it with fish instead of chicken.
Heat the oil and butter in a frying pan over a medium heat. Add the chicken and cook for 1-2 minutes until just coloured. Add the onions, garlic, carrots and leek and cook for 3-4 minutes until lightly coloured.
Add the stock and cream, turn the heat down to low and simmer for 20-30 minutes until the vegetables are tender and the sauce has reduced slightly.
