Simple salads make great lunches. Fresh, easy to put together, very healthy and with loads of flavours, you really can’t go wrong. If you can grow a few herbs in your garden or on the window sill, you’ll always have a fresh supply.
Rub a little oil all over the chicken pieces, then season with a little salt and pepper. Heat a griddle pan over a high heat until smoking, or use a barbecue. Add the chicken to the griddle pan and cook for 3-4 minutes on each side until the juices run clear when the thickest part of the chicken is pierced with the tip of a sharp knife. Leave to one side.
