Glazed orange & mustard chicken salad

There’s a lovely contrast of tastes and textures in this dish, with the freshness of the orange contrasting with the rich mustard flavour. If you toss the chicken in the marinade before you go to work, it will take no time at all to put it together when you get home. For a more substantial dish, you could add parmentier potatoes, sprinkling them over just before serving.
