I always remember my mum making a pie with this classic combination of chicken and asparagus. I have tried to give this great combo a new modern take to highlight the subtle contrasts in flavour and texture, so I’ve kept the asparagus raw and peeled it thinly into strips, then used it in a salad with that fantastic, much-under-used grain, quinoa. This makes for a really healthy dish that I’m sure you will enjoy.
