Yuk sung is a fresh and simple dish, but I always feel it could do with a bit more spice. So my version of the recipe uses chicken and Thai spices combined with sweet mango to give it a great flavour. It is ideal as a snack or starter or a sharing course for friends.

Ingredients

  • ½ mango, peeled, pitted and finely diced
  • 4 mint leaves, roughly chopped
  • 1 kaffir lime leaf, finely shredded

Method

Mix together the mango, mint and lime leaf in a bowl, cover and chill in the fridge while you cook the chicken.

Heat half the oil in a large frying pan over a high heat until shimmering. Add the chicken and cook for 2 minutes, stirring continuously. Remove the meat from the pan using a slotted spoon, put on a plate and leave to one side.
