For this recipe, I use strips of chicken breast - known as inner fillets - cut from the underside of the breast. You can buy chicken fillets or cut one fillet from each chicken breast, then use the breasts for another recipe. You can make the sweet and sour sauce while the chicken is chilling.

Ingredients

  • 50 g/ oz/heaped cup plain (all-purpose) flour

Method

Put the flour in a shallow bowl and season with plenty of salt and pepper.

Mix together the breadcrumbs and sesame seeds in a second shallow bowl. Whisk together the eggs and milk in a third shallow bowl to make an egg wash, then line the three bowls up in a row. Lightly dust each chicken fillet in the flour, shaking off any excess. Dip in the egg wash, then coat with the breadcrumbs. P
