A schnitzel is a boneless piece of meat that has been flattened out, then egg washed, breadcrumbed and fried. The dish originated in Austria and Germany and traditionally would have used veal. I really enjoy a bit of fried chicken and the beauty of this recipe is it is super-quick to cook and the chicken stays really tender. Plus you can serve it with any kind of potatoes and vegetables. The delicious sorrel mayonnaise gives it a contemporary twist.
