A chicken supreme is the breast of the chicken with the wing bone attached. If you joint your own chickens, they are easy to prepare. Otherwise, just ask the butcher to prepare them for you. They are usually happy to do so.

Method

Preheat the oven to 190°C/375°F/Gas 5 and season the chicken with salt and pepper. Heat half the oil in a large, heavy-based frying pan over a high heat, then add the chicken and fry for about 2 minutes on each side until well browned and the meat has started to caramelize.
