Roast chicken is healthy, full of protein and a classic dish, but it’s hardly something new. So here is my modern take on roast chicken, adding a spicy rub that gives your taste buds a kick and makes sure you and yours sit up and take notice. Plus, these are no ordinary chips as they are sprinkled with my smoky bacon crumb - different and delicious. You can easily keep the rub in an airtight container for a few days, so make it in advance to speed up an after-work meal.
