Homemade crumpets with chicken & chive-scrambled eggs

Homemade crumpets are something a little bit special - I often used to eat them as a child with lots of butter. Most people wouldn’t think of making them, but they are actually quite easy to make yourself - and even easier if you buy some crumpet rings from any cookshop, although if you don’t have any, just use a large round pastry cutter. Crumpets go really well with soft scrambled egg and fresh chives, making this a perfect little recipe for breakfast or brunch.
