I began with a classic Niçoise salad but this one has my own little twists - a steamed chicken breast to keep it nice and healthy, a tomato dressing made with capers to give it definition, and a delicious sprinkling of olive crumb on the top.

Ingredients

  • 100 g/ oz/scant ¾ cup pitted black or green olives, halved

Method

Preheat the oven to 140°C/275°F/Gas 1. Reserve a few olives and bake the remainder for 30 minutes until dried out, then leave to cool and chop
