Croquetas are one of my favourite things to make and to eat. Traditional Spanish-style croquetas are made with a béchamel base, which is infused with extra flavours. Breadcrumbed and deep fried, these chicken croquetas make a tasty canapé, starter or small plate.
Melt the butter in a medium saucepan, then stir in the flour and cook gently for about 4 minutes.
Start to slowly add the milk in small batches, making sure to stir together each time to remove any lumps - a balloon whisk is helpful here to beat out any lumps. Once all the milk has been added, bring the mixture to the boil, constantly whisking, and it will thicken to a smooth béchamel.
