A light and healthy recipe, these neat little patties make a lovely simple snack that can be served as a starter, canapé or even a light lunch. Team them with any fresh salad ingredients to ring the changes, or add a few chips or buttered new potatoes to make a more substantial meal.
Mix together all the ingredients for the patties, cover with cling film (plastic wrap) and chill in the fridge for 30 minutes.
Shape the chicken mixture into 8 small burgers. Heat the frying oils in a frying pan until shimmering, then add the patties and fry for 2 minutes on each side until cooked through and golden. Drain on kitchen paper.
