Empanadas are small, savoury pasties, common in Spain and Portugal. They come with all different fillings and there are even empanada festivals, championing the regional specialities. I’ve chosen to partner the chicken with the strong, sharp flavour of tarragon with soft mushrooms and toasted hazelnuts - or cobnuts as I call them - for that extra bit of texture, and I’ve wrapped that delicious combination in a crisp short pastry.
