It is said that this dish was originally created by King Henry IV of England so it has a royal pedigree. With lots of fresh vegetables, a light broth and beautifully juicy chicken, this twenty-first-century version is equally regal.

For the Chicken & Vegetable Broth

Method

Bring the stock to the boil in a large, flameproof casserole dish over a high heat. Add all the vegetables and herbs for the broth. Put the whole chicken in the stock pot, reduce the heat to low, cover with a lid and simmer for 50 minutes until the juices run clear when the thickest part of the chicken is pierced with the tip of a sharp knife.

Carefully lift out the chicken, then strain
