Making a soup was one of the first things I did when I started cooking, building up the flavours from the base with onions or shallots and garlic sautéed in butter. If you want to become a good cook, start by making lots of soups and playing around with flavours and textures. This soup brings the peppery notes of watercress to the succulent chicken, with potato to thicken the soup and add both texture and flavour.
