I’m a big fan of smoked chicken, and by using green tea in your smoking ingredients, you retain the soft texture of the chicken and give it a more subtle smokiness. Add the lovely fresh chard, heritage tomato and cucumber and you get a super-light, fresh and summery salad with lots of colour and a smoky, crunchy texture from the bacon.
