A verrine is a French dish in which the ingredients are layered in a small glass. I first discovered the verrine when I was doing some filming and was introduced to a lovely gentleman called Franc, who had written a book on them. I loved the visual aspect of it, with all the ingredients in one glass where the flavours marry together, and it works perfectly with smoked chicken and fresh asparagus in season to give you that lovely flavour of the countryside.
