Perfect for an impressive canapé or even just a simple snack, courgette (zucchini) flowers have a lovely, delicate flavour and texture. The innovative twist in this recipe is created by stuffing them with a finely chopped chicken mixture, and dipping them in a tempura batter before deep-frying. You end up with a very light, crispy batter surrounding the tender chicken.
