The influence of Indonesian chicken satay was the starting point for this dish, married with the fact that I enjoy deep-fried meat with a simple sauce. You can also serve the sauce with simple chargrilled or barbecued chicken.
Heat the oil in a large saucepan over a medium heat. Add the chicken and fry for 1-2 minutes on each side until brown. Add the stock and bring to the boil, then turn the heat down to low and simmer for 2 hours until the meat is falling off the bone. Drain and leave to one side to dry.
