Chicken feet are a tasty part of the chicken and are served all round the world, prepared in all types of ways, from braised to deep fried. They also have some health benefits - 70 per cent of the protein content is collagen, improving skin health, and they are also a good source of vitamin B9.
Start by preparing the chicken feet; wash them in cold water and clip the nails. Put the cleaned chicken feet in a pan of cold water and add the lemongrass stalks, garlic cloves, soy sauce, salt and peppercorns.
