Probably the best known of all the chicken flavour combinations, this simple dish really allows the ingredients to shine. A boned chicken thigh is stuffed with forcemeat, then formed into a sausage shape and poached. I have given the dish a distinctly creamy flavour and combined that with earthy wild mushrooms and a touch of Asia with the spiced rice.
