Once you master the basics of risotto, the options are endless. You can also make the base in advance, then finish it off just before serving - perfect when you are in a rush. If you can’t find wild garlic, or it’s out of season (spring to early summer), just use baby leaf spinach. And do have a go at smoking the chicken yourself.
