Bring a saucepan of water to the boil over a high heat and have a bowl of ice-cold water ready. Add the herbs and spinach to the boiling water and blanch for 1 minute, then lift out with a slotted spoon and put into the ice-cold water to stop them cooking any further.
Lift the herbs and spinach out of the ice-cold water and gently shake off any excess, then transfer to a small blender.
