Heat the groundnut oil in a small saucepan over a medium heat. Add the garlic, chilli, ginger and pepper and fry for 2-3 minutes until softened and fragrant. Add the pineapple juice, sugar, ketchup, vinegar, soy sauce and salt. Bring to the boil, then turn the heat down to low and simmer for a few minutes, stirring continuously, until the ingredients are well blended and the sugar has dissolved
