  • 4 large ripe vine tomatoes with seeds, finely chopped
  • ½ red onion, finely diced
  • 2 spring onions (scallions

Method

Put all the ingredients in a large bowl. Whisk together until well blended, then season with salt and pepper to taste.

Store in an airtight container in the fridge for up to 2 days.
