Whisk together the egg yolks, mustard, vinegar and lemon juice in a non-metallic bowl until the mixture goes slightly pale and thickens. Gradually drizzle in the oil, a little at a time, whisking continuously until the mayonnaise thickens.
If the mayonnaise is too thick once all the oil has been added, whisk in 1-2 teaspoons warm water. Season with salt and pepper to taste. If you like,
