  • 750 g/1 lb 10 oz cooking apples, peeled, cored and finely chopped

Method

Put the apples, onion and 80ml/2½fl oz/⅓ cup water in a saucepan over a medium heat and bring to the boil. Turn the heat down to low and simmer for 15 minutes until the onion is soft.

Add the salt, spices and half the vinegar and continue to simmer for 10 minutes, stirring occasionally. Add the sugar, syrup and the remaining vinegar and simmer for a further 5 minutes, stirring, until th
