  • 2 ripe mangoes, peeled, pitted and cut into chunks
  • 2.5 cm/1 in piece of

Method

Bring all the ingredients to the boil in a large saucepan over a medium heat, then turn the heat down to low and leave to simmer for 15-20 minutes, stirring occasionally, until rich and thick. Leave to cool slightly.

Spoon into airtight jars and leave to finish cooling. Seal with the lids and keep in the fridge. It will keep for several weeks.
