  • 250 g/9 oz/2 cups plain (all-purpose) flour, plus extra for dusting

Method

Mix together the flour and salt in a bowl, then make a well in the centre and add the butter. Rub in the butter, using your fingertips, until the butter is broken up but still visible in lumps.

Gradually add the cold water, a drop at a time, to bind the ingredients together, but don’t overwork the dough as you still want to be able to see the lumps of butter. Wrap in cling film (plastic
