Put the couscous in a large, heavy-based saucepan over a medium heat and cook for about 5 minutes, stirring frequently to keep the grains moving in the pan, until the couscous is a lovely mottled, toasted colour. Immediately remove from the heat and tip into a bowl, or it may burn.
