Put the potatoes in a saucepan and rinse under cold water until the water runs completely clear. This will remove much of the starch from the potatoes. Drain, then fill the pan with cold water to cover the potatoes. Bring to the boil over a high heat, then turn the heat down to medium and simmer for about 5-10 minutes until the potatoes are just tender in the centre but not fully cooked.
