Method

Preheat the oven to 200°C/400°F/Gas 6. Bring a saucepan of water to the boil over a high heat, add the parsnips, carrots and celeriac and boil for 4 minutes until just soft in the middle. Drain and refresh under cold water to stop them cooking further, then drain again. Put in a roasti
