Brining is soaking chicken in salted water before roasting or smoking in order to keep the meat moist when it is cooking or smoking. You can brine chicken for any of the recipes in this book.
Dissolve the brine ingredients in 6l/1.3 gallons/25 cups water. Add the chicken, making sure that it is covered in the brine. Cover and leave in the fridge overnight, or for about 12 hours. Drain well, rinse, then drain again before cooking.
