Wake-and-Bake Meat Omelet

Cali culture has given the world a lot. West Coast rap, Hollywood, and—yeah, we’re damn proud of it—wake-and-bake living. It’s part of the culture, and I love few things more than starting the day in a relaxed state of mind, enjoying that green the earth gave us.

But here’s the thing: A good wake and bake means you’re going to be hungry. This hearty omelet has not one but two breakfast meats. I flavor my bacon and sausage with shallots, salt, and pepper and sprinkle the mixture with
