Ingredients: 8 oz [230 g] flank steak, cut thinly against the grain into 2 in [5 cm] strips; ⅛ tsp baking soda; ½ tsp cracked black pepper; 1 tsp brown sugar; 1 tsp sesame oil; 2 Tbsp Shaoxing rice wine or dry sherry; 2 Tbsp oyster sauce; 2 Tbsp soy sauce; 2 garlic cloves, minced; Sriracha, for serving (optional); ½ cup [50 g] snow peas, strings removed, cut in half; 3 green onions, thinly sliced on the diagonal, dark green parts separated; 1 cup [60 g] sliced shiitake mushrooms; 3 cups [180 g] thinly sliced napa cabbage; 1 medium carrot, julienned; ½ red bell pepper, thinly sliced; 16 oz [455 g] fresh lo mein noodles or 12 oz [340 g] dried spaghetti or linguine; 2 Tbsp vegetable oil
