Ingredients: 1 tsp vanilla extract; 2 eggs; 2 cups [400 g] granulated sugar; ¼ tsp salt; 1 cup [260 g] creamy peanut butter; 2 pints [960 g] vanilla or chocolate ice cream, for serving; ¾ tsp baking powder; ½ tsp baking soda; 2 cups (4 sticks [455 g]) unsalted butter, at room temperature; 2½ cups [350 g] all-purpose flour; 1 cup [200 g] packed light brown sugar; Sprinkles or crushed peanuts, for garnish (optional)

I love a good, cold sweet treat on a hot summer day. In the summer, when I’m craving my Rolls Royce PB–Chocolate Chip Cookie from my first cookbook, From Crook to Cook, I take out the chips and turn the cookie into an ice cream sandwich.
