This is quite one of the best ways of enjoying the flavour of truffles. It is difficult to know whether to prefer it to the following recipe, which ennobles scrambled eggs to the status of cuisine de luxe.


  • The ingredients are exactly as for l’omelette aux truffes


Put your truffle with the eggs as for an omelette, then poach it as indicated. When you are ready, slice the truffle and add it to the eggs and scramble them in the usual way.

Serve with slices of toast or country bread. These are two egg dishes which call, unusually, for a rather special red wine.
