It is claimed that the truffle is a traditional ingredient – Sarlat holds important truffle markets in winter – although some locals vehemently deny this. It would seem that for everyday cooking the seasoning has always been just a mixture of garlic and parsley and what seems most likely is that when truffles were more plentiful than now, they were added to the ordinary pommes de terre confites, which were awarded the more specific title of pommes sarladaises.
